The Smoker itself can be under a 6m*3m Gazebo to protect against the elements (which hopefully won’t be needed), so you’ll need a suitable position with easy access for my refrigerated truck. The food will be cooked on our Iron Horse Smoker using hardwood (mainly Oak with Apple and/or Cherry wood) and will need 5 -12 hours of cooking time.
